Check the settings of the parameter "Field used as send to sender" from the profile.
The field aics_send_to_sender should be selected there.
Also check "Field used as email". The field where the user is entering his email address should be selected there.
The message in the back-end is based on the settings I've mentioned.
You can also set an email field to always receive the message, and this will be reflected in the "Sent to" column in the back-end and not by the column "Sent to sender" since that is a different feature.
