Email are coming through a little garbled - is there an option I can use to change the format???

Make sure you set the email format to HTML in the profile.

We have the HTML set on the profile.

I am also noticing that the sender when they check the send copy of email is not working as well.
The administrator has disabled public write access.

You either have a problem on the email server reading the email, or the one sending the email or you modified the configuration of that field.
Check the settings of the field "Field used as send to sender" in the profile. It has to be set to the field the user clicks to activate the sending of a copy to him self.
